Glazed Lemon Zucchini Bread

Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 3/4 cups sugar
  • 3 eggs
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 tablespoon finely grated lemon zest
  • LEMON GLAZE
  • 1/2 cup confectioners’ sugar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon water
  • In a small bowl, combine confectioners’ sugar, lemon juice, and water; stir until smooth.

Instructions

  • Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans. In a large bowl, combine flour, baking soda, baking powder, and salt. In a medium bowl, whisk together sugar, eggs, butter, oil, and vanilla. Add to flour mixture; stir just until moistened. Add zucchini and lemon zest; stir just until combined. Divide batter between prepared pans. Bake until a toothpick inserted in centers comes out clean, 48 to 53 minutes. Cool in pans 10 minutes before removing to a wire rack. Drizzle loaves with Lemon Glaze. Cool completely. Makes 2 medium loaves
