Ingredients - FILLING
- Butter, for dish
- 5 cups blueberries
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice

- 1 1/4 cups all-purpose flour
- 1/4 cup sugar plus 1 teaspoon sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 cup heavy (or whipping) cream
- 6 tablespoons (3/4 stick) butter, melted
- Whipped cream or vanilla ice cream (optional)
Instructions - Preheat oven to 375 degrees. Butter a 2-quart baking dish. For filling, in a medium bowl, combine blueberries, sugar, and cornstarch. Add lemon juice; toss to combine Transfer to prepared dish.
- For topping, in a medium bowl, combine flour, 1/4 cup sugar, baking powder, and salt. In a small bowl, stir together heavy cream and butter. Add to flour mixture; stir until just combined. Drop by tablespoonfuls over blueberries. Sprinkle with the remaining 1 teaspoon sugar. Bake until bubbly and topping is golden brown, 35 to 40 minutes. Cool 10 minutes on a wire rack before serving. Serve with whipped cream or vanilla ice cream, if desired. Makes 8 servings.

- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon baking powder
- 3 eggs, slightly beaten
- 1 1/2 cups sugar
- 1 cup applesauce
- 1/2 cup (1 stick) butter, melted
- 3 tablespoons vegetable oil
- 2 medium apples, peeled, cored, and shredded
- Confectioners' sugar (optional)
Instructions - Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans with shortening. In a large bowl, combine flour, baking soda, cinnamon, salt, allspice, and baking powder. In a medium bowl, whisk together eggs, sugar, applesauce, butter, and oil. Add to flour mixture; stir just until moistened. Stir in apples. Divide batter between prepared pans. Bake until a toothpick inserted in centers comes out clean, 50 to 55 minutes. Cool in pans 10 minutes before removing to a wire rack. Cool completely. Sprinkle with confectioners’ sugar, if desired. Makes 2 medium loaves.

Instructions - Preheat oven to 375 degrees. Grease 15 muffin cups or line with paper liners. In a large bowl, combine flour, cinnamon, allspice, baking soda, salt, and baking powder. In a medium bowl, whisk together eggs, 3/4 cup sugar, applesauce, milk, butter, oil, and vanilla. Add to flour mixture; stir just until moistened. Stir in apples. Divide batter among prepared muffin cups. Sprinkle with the remaining 2 teaspoons sugar. Bake until a toothpick inserted in centers comes out clean, 18 to 22 minutes. Cool in pan 5 minutes before removing to a wire rack. Cool completely. Makes 15 muffins.

- 1 cup sugar
- 1/4 cup packed brown sugar
- 1/2 cup (1 stick) butter, melted
- 1 teaspoon vanilla
- 2 tablespoons unsweetened cocoa powder
- 1/3 cup miniature semisweet chocolate morsels, plus 2 tablespoons
Instructions - Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans. In a large bowl, whisk together 1 1/2 cups flour, baking soda, cinnamon, and salt. In a medium bowl, whisk together sour cream, eggs, bananas, sugar, brown sugar, butter, and vanilla. Add egg mixture to flour mixture. Stir just until moistened.
- Remove 1/3 of the batter to a small bowl; stir cocoa powder and chocolate morsels into this batter. Stir the remaining 1/2 cup flour into the plain batter. Spread half of the plain batter into both prepared pans. Using half of the chocolate batter, drop heaping tablespoons randomly onto plain batter in both pans. Spread the remaining plain batter over chocolate batter in both pans. Drop the remaining chocolate batter over plain batter in the same manner in both pans. Using a butter knife, swirl through the batters to create a marbled effect. Sprinkle loaves with the remaining 2 tablespoons miniature semisweet chocolate morsels. Bake until a toothpick inserted in center comes out clean, 40 to 45 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely. Makes 2 medium loaves.

Easy Rainbow Sprinkle Cookies

- 1 (15.25-ounce) package white cake mix
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 6 tablespoons (3/4 stick) butter, melted
- 2 tablespoons vegetable oil
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/3 cup multicolored candy sprinkles
Instructions - Preheat oven to 350 degrees. In a large bowl, whisk together cake mix, flour, and baking powder. Add butter, vegetable oil, eggs, and vanilla. Stir with a wooden spoon until well mixed; stir in candy sprinkles. Shape dough into 1 1/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 8 to 10 minutes. Cool 2 minutes before removing to a wire rack. Makes about 3 1/2 dozen cookies.

- 2 1/3 cups all-purpose flour, divided
- 1/2 cup confectioners’ sugar, plus more for sifting over top
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) cold butter, cut into pieces
- 4 eggs
- 1 1/2 cups sugar
- 3/4 cup fresh lemon juice
- 1 teaspoon finely grated lemon zest
Instructions - Preheat oven to 350 degrees. In a large bowl, combine 2 cups flour, 1/2 cup confectioners’ sugar, and salt. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Pat mixture evenly into the bottom of a 9x13-inch baking pan. Bake until edges are golden, 20 to 22 minutes.
- Meanwhile, in a large bowl, whisk together eggs, sugar, lemon juice, and lemon zest. Add the remaining 1/3 cup flour; whisk until combined. Pour over hot crust. Reduce oven temperature to 300 degrees; bake until set, 30 to 35 minutes. Cool completely on a wire rack. Refrigerate until thoroughly chilled, about 2 hours. Sift confectioners’ sugar over top. Cut into bars. Makes 32 bars.

Ingredients Instructions - In a medium saucepan, combine rhubarb, 1/2 cup strawberries, sugar, and water. Bring to a boil. Reduce heat; simmer, covered, until rhubarb is tender, about 5 minutes, stirring occasionally. Meanwhile, mash the remaining strawberries. In a small bowl, combine cornstarch and lemon juice. Add mashed strawberries and cornstarch mixture to rhubarb mixture. Bring to a boil. Reduce heat; simmer 2 minutes, stirring frequently. Let stand 10 minutes before serving. Makes 2 cups.

Peanut Butter Sandwich Cookies

- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup (1/2 stick) butter, softened
- 1/4 cup vegetable shortening
- 1/2 cup peanut butter
- 1/2 cup sugar, plus more for finishing
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla

- PEANUT BUTTER FROSTING
- 1/2 cup creamy peanut butter
- 1/4 cup (1/2 stick) butter, softened
- 1 1/3 cups confectioners’ sugar
- 3 tablespoons heavy (or whipping) cream
- In a large bowl, combine peanut butter and butter; beat with an electric mixer until well blended. Gradually beat in confectioners’ sugar alternately with heavy cream until well combined.
Instructions - Preheat oven to 350 degrees. In a medium bowl, combine flour, baking soda, baking powder, and salt. In a large bowl, combine butter, shortening, and peanut butter. Beat with an electric mixer on medium speed for 1 minute. Add 1/2 cup sugar and brown sugar; beat until combined. Add egg and vanilla; beat until combined. Gradually beat in as much flour mixture as possible; stir in the rest. Shape dough into 1 1/4-inch balls; place 2 inches apart on ungreased cookie sheets. Dip a fork in additional sugar; flatten cookies in a crisscross design. Bake until centers are set and edges are crackled, 8 to 11 minutes. Cool 2 minutes before removing to a wire rack. Cool completely. Turn half of the cookies over; add Peanut Butter Frosting to bottoms. Top with the remaining cookies; gently press together. Makes about 1 1/2 dozen cookies.

Sprinkle cinnamon mixture over batter in pan; cover with the remaining batter. Using a butter knife, swirl through the batter. Bake until a toothpick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely. Makes 12 servings.
