Ingredients
- FILLING
- Butter, for dish
- 5 cups blueberries
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- TOPPING
- 1 1/4 cups all-purpose flour
- 1/4 cup sugar plus 1 teaspoon sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 cup heavy (or whipping) cream
- 6 tablespoons (3/4 stick) butter, melted
- Whipped cream or vanilla ice cream (optional)
Instructions
- Preheat oven to 375 degrees. Butter a 2-quart baking dish. For filling, in a medium bowl, combine blueberries, sugar, and cornstarch. Add lemon juice; toss to combine Transfer to prepared dish.
- For topping, in a medium bowl, combine flour, 1/4 cup sugar, baking powder, and salt. In a small bowl, stir together heavy cream and butter. Add to flour mixture; stir until just combined. Drop by tablespoonfuls over blueberries. Sprinkle with the remaining 1 teaspoon sugar. Bake until bubbly and topping is golden brown, 35 to 40 minutes. Cool 10 minutes on a wire rack before serving. Serve with whipped cream or vanilla ice cream, if desired. Makes 8 servings.
