- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 3/4 cups sugar
- 3 eggs
- 1/2 cup (1 stick) butter, melted
- 1/2 cup vegetable oil
- 2 teaspoons vanilla
- 2 cups grated zucchini
- 1 tablespoon finely grated lemon zest
- LEMON GLAZE
- 1/2 cup confectioners’ sugar
- 2 teaspoons fresh lemon juice
- 1 teaspoon water
- In a small bowl, combine confectioners’ sugar, lemon juice, and water; stir until smooth.
Instructions
- Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans. In a large bowl, combine flour, baking soda, baking powder, and salt. In a medium bowl, whisk together sugar, eggs, butter, oil, and vanilla. Add to flour mixture; stir just until moistened. Add zucchini and lemon zest; stir just until combined. Divide batter between prepared pans. Bake until a toothpick inserted in centers comes out clean, 48 to 53 minutes. Cool in pans 10 minutes before removing to a wire rack. Drizzle loaves with Lemon Glaze. Cool completely. Makes 2 medium loaves
