- LEMONY ORZO AND CHICKEN SALAD
- 1 cup dried orzo or other small pasta
- 1 1/2 cups cooked chopped chicken
- 1 medium cucumber, seeded and chopped
- 2 small tomatoes, seeded and chopped
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon minced red onion
- Lemon-Honey Dressing
- Salt and pepper to taste
- LEMON-HONEY DRESSING
- 1/4 cup fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon finely grated lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 1/8 teaspoon pepper
Instructions
- Cook orzo according to package directions. Drain; rinse with cold water and drain again. In a large bowl, combine orzo, chicken, cucumber, tomatoes, mint, parsley, and onion. In a small bowl, combine Lemon-Honey Dressing ingredients. Whisk until well blended. Pour dressing over salad. Toss to combine; season with salt and pepper. Makes 4 servings.
