Ingredients

- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk
- 3/4 cup sugar
- 1/2 cup (1 stick) butter, melted
- 1 teaspoon vanilla
- 2 teaspoons finely grated lemon zest
- 1 cup blueberries
- Lemon Glaze (optional)
- LEMON GLAZE
- 1/4 cup confectioners’ sugar
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon water
- In a small bowl, combine confectioners’ sugar, lemon juice, and water; stir until smooth.
Instructions
- Preheat oven to 350 degrees. Grease the bottom of an 8x4-inch loaf pan. In a large bowl, combine flour, baking powder, and salt. In a medium bowl, combine egg, milk, sugar, butter, and vanilla; whisk until well blended. Stir in lemon zest. Add to flour mixture; stir just until moistened. Stir in blueberries. Transfer to prepared pan. Bake until a toothpick inserted in centers comes out clean, 50 to 55 minutes. Cool in pan 10 minutes before removing to a wire rack. Drizzle with Lemon Glaze, if desired. Cool completely. Makes 1 medium loaf.
Wonderful recipe! We grow blueberries,so am always looking for new recipes. This was delicious bread,gone in a day! Used buttermilk in place of the milk as I had to use it up. Thank you!
