Ingredients

  • 3 medium cooking apples, peeled, cored, and coarsely chopped
  • 2 medium pears, peeled, cored, and coarsely chopped
  • 3 tablespoons sugar
  • 1/2 cup cranberry juice cocktail
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 2 (3- to 3 1/2-inches each) cinnamon sticks

Instructions

  • In a medium saucepan, combine apples, pears, sugar, cranberry juice cocktail, water, lemon juice, and cinnamon sticks. Bring to a boil. Reduce heat; simmer, partially covered, until apples and pears are tender, 10 to 12 minutes, stirring occasionally. Remove from heat. Remove cinnamon sticks. Mash with a potato masher to desired texture. Serve warm or chilled. Makes about 2 cups.

Ingredients

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons cinnamon, divided
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/2 cup packed brown sugar
  • 6 tablespoons (3/4 stick) butter, softened
  • 1 egg
  • 3/4 cup 100% pure pumpkin
  • 1/2 cup milk
  • 1/2 cup sugar
  • 6 tablespoons (3/4 stick) butter, melted

Instructions

  • Preheat oven to 350°. Lightly coat muffin cups with nonstick cooking spray. In a medium bowl, combine flour, baking powder, baking soda, salt, 1/4 teaspoon cinnamon, allspice, and ginger. In a large bowl, combine brown sugar and softened butter. Beat with an electric mixer until well blended. Add egg and pumpkin; beat until combined. Add flour mixture alternately with milk, beating well after each addition. Divide batter among prepared muffin cups. Bake until a toothpick inserted in centers comes out clean, 15 to 18 minutes. Cool in pan 5 minutes before removing to a wire rack. Meanwhile, in a small bowl, combine sugar and the remaining 1 teaspoon cinnamon. Dip warm muffin tops in melted butter, then in cinnamon-sugar mixture. Makes 12 servings.

Ingredients

  • 1 small green bell pepper, chopped
  • 2 medium jalapeño chiles, seeded and minced
  • 1/4 cup minced white onion
  • 2 medium scallions, thinly sliced
  • 3 tablespoons chopped fresh cilantro
  • 1 garlic clove, minced
  • 2 tablespoons fresh lime juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/8 teaspoon pepper

Instructions

  • In a medium bowl, combine all ingredients. Cover, and refrigerate at least 1 hour. Makes about 3 cups salsa.

  • Nonstick cooking spray
  • 1/2 cup (1 stick) butter, melted
  • 3 tablespoons vegetable oil
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 tablespoon brewed coffee
  • 1 1/2 teaspoons vanilla
  • 3/4 cup flour
  • 3/4 cup unsweetened cocoa powder

Instructions

  • Preheat oven to 350 degrees. Line an 8x8-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. Coat foil with nonstick cooking spray. In a large bowl, whisk together butter, vegetable oil, and sugar. Add eggs, coffee, and vanilla; whisk to combine. Add flour and cocoa powder; stir until smooth. Spread into prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely on a wire rack. Remove brownies by lifting foil ends; peel off foil. Place on a cutting board and cut into squares. Makes 16 brownies.

  • 1 (16-ounce) package rotini (corkscrew) pasta
  • 1 (7.5-ounce) jar quartered marinated artichoke hearts, drained, chopped and reserving 2 tablespoons liquid
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried oregano, crushed
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 pound sliced provolone cheese, cut into strips
  • 1/4 pound sliced Genoa salami, cut into strips
  • 1/4 cup minced red onion
  • 1 small red bell pepper, chopped
  • 2 medium tomatoes, seeded and chopped
  • 1 (3.8-ounce) can sliced pitted ripe olives, drained
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh basil

Instructions

  • Begin cooking rotini according to package directions.
  • Meanwhile, prepare vinaigrette. In a medium bowl, combine the 2 tablespoons reserved artichoke liquid, olive oil, vinegar, sugar, salt, oregano, garlic powder, and pepper; whisk until well blended. In a large bowl, combine artichoke hearts, provolone cheese, salami, onion, pepper, tomatoes, olives, Parmesan cheese, parsley, and basil.
  • Drain rotini; rinse with cold water and drain again. Add rotini to cheese and salami mixture; drizzle with vinaigrette. Toss to combine. Cover and chill for at least 1 hour and up to 1 day in advance. Toss before serving. Makes 12 servings.

  • Sugar
  • 1/2 cup light rum
  • 1/3 cup orange flavored liqueur, such as Triple Sec
  • Juice from 2 medium limes
  • 4 ripe medium bananas
  • 1/3 cup sugar (more or less, to taste)
  • 3 cups crushed ice
  • Lime slices (optional)
  • Banana slices (optional)

Instructions

  • Coat the rims of glasses with lime wedges; dip in sugar. In a blender, combine rum, orange flavored liqueur, lime juice, bananas, 1/3 cup sugar, and 2 cups crushed ice. Blend 30 seconds or until well combined. Add the remaining 1 cup ice; blend until slushy. Garnish with lime and banana slices, if desired. Makes 4 servings.

  • In a blender or food processor, combine sliced strawberries, jam, sugar, and lemon juice; process until smooth. Strain through a fine-mesh sieve; discard seeds. Divide puree into six champagne glasses; slowly add prosecco. Garnish each glass with a strawberry slice, if desired. Makes 6 servings.

  • Preheat oven to 350 degrees. Grease the bottom of a 9x5-inch loaf pan with shortening. In a large bowl, combine flour, sugar, baking powder, and salt. Stir in beer and butter. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45 to 50 minutes. Cool in pan 10 minutes before removing to a wire rack. Serve warm or cooled. Makes 16 servings.
