Chocolate Peanut Butter Oat Bars

Chocolate Peanut Butter Oat Bars

Ingredients

  • 2 cups rolled oats
  • 1/2 cup honey
  • 1/4 cup firmly packed brown sugar
  • 2 tablespoons butter
  • 1/2 cup semisweet chocolate chips, divided, plus 1 tablespoon
  • 3/4 cup regular or reduced-fat peanut butter
  • 1/2 teaspoon vanilla
  • 2 cups crispy rice cereal
  • 1/4 cup peanut butter chips, plus 1 tablespoon

Instructions

  • Preheat oven to 350 degrees. Line a 9x9-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. Coat foil with nonstick cooking spray. Place oats on a baking sheet; bake until lightly browned, 10 to 15 minutes, stirring occasionally. Transfer to a large bowl.
  • In a medium saucepan, combine honey, brown sugar, and butter. Cook over medium heat until sugar has dissolved, about 3 minutes, stirring frequently. Remove from heat; stir in 1/4 cup chocolate chips, peanut butter, and vanilla. Add to oats; stir to combine. Add cereal, the remaining 1/4 cup chocolate chips, and 1/4 cup peanut butter chips; stir to combine. Transfer mixture to prepared pan; press into pan. Sprinkle with the remaining 1 tablespoon chocolate chips and the remaining 1 tablespoon peanut butter chips; press gently into oat mixture. Refrigerate until firm, about 2 hours. Remove bars by lifting foil ends; peel off foil. Place on a cutting board and cut into bars. Makes 24 bars.

Peanut Butter Eggs

Yield: Makes 1 1/ 2 dozen peanut butter eggs

Peanut Butter Eggs

Ingredients

  • (White chips or white candy melts may be used in place of chocolate chips, if desired.)
  • 1 cup confectioners’ sugar
  • 1/2 cup creamy peanut butter
  • 3 tablespoons butter, softened
  • 1 1/2 cups semisweet or milk chocolate chips
  • 2 teaspoons vegetable shortening
  • Assorted candy sprinkles, melted chocolate (optional)
  • Green Tinted Coconut* (optional)

Instructions

  • Line a baking sheet with waxed paper. In a large bowl, combine confectioners’ sugar, peanut butter, and butter. Using a wooden spoon, stir until well combined. Shape mixture into 18 balls. Place on prepared baking sheet; form into egg shapes. Refrigerate until firm, 30 to 40 minutes.
  • Meanwhile, place chocolate chips and shortening in a medium microwave-safe bowl. Melt in the microwave according to package directions; stir until smooth. With a fork, dip bottoms of eggs into melted chocolate; use a spoon to help cover the tops and sides of eggs. Lift eggs from melted chocolate letting excess chocolate drip off. Place on prepared baking sheet. Sprinkle with candy sprinkles immediately after dipping, or let stand at room temperature until firm, about 20 minutes, or refrigerate until firm, 5 to 7 minutes, and then drizzle with melted chocolate, if desired. Place tinted coconut on a plate; arrange eggs decoratively in coconut. Makes 1 1/2 dozen peanut butter eggs.
  • *GREEN TINTED COCONUT: In a small bowl combine several drops of green food color with 1 1/ 2 teaspoons water; add to 2 cups coconut. Toss with a fork until evenly tinted.

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into pieces
  • 1 cup plus 1 tablespoon buttermilk
  • 2/3 cup golden raisins
  • 2 teaspoons caraway seeds

Instructions

  • Line a baking sheet with parchment paper. Preheat oven to 350 degrees. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Using a pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Make a well in the center. Add buttermilk; stir with a fork until moistened. Stir in raisins and caraway seeds.
  • Turn dough out onto a lightly floured surface; knead by folding and pressing until nearly smooth, 10 to 12 strokes. Pat or roll dough into a circle about 1-inch thick; transfer to prepared baking sheet. With a sharp knife, cut a cross 1/4-inch deep on top of loaf. Brush top with the remaining 1 tablespoon buttermilk. Bake until golden brown and a toothpick inserted in center comes out clean, 30 to 35 minutes. Remove to a wire rack. Cool 15 minutes before slicing into wedges. Serve warm or cooled. Makes 1 loaf.

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 1 cup water
  • 1/2 cup (1 stick) butter
  • 4 eggs
  • Creamy Vanilla Filling
  • Chocolate Sauce
  • CREAMY VANILLA FILLING
  • 1 (4-serving size) package instant vanilla pudding mix
  • 2 cups half-and-half or fat-free half-and-half
  • In a medium bowl, combine pudding mix and half-and-half. Beat with a wire whisk for 2 minutes. Let stand 5 minutes before serving.
  • CHOCOLATE SAUCE
  • 1/2 cup heavy (or whipping) cream
  • 2 tablespoons light corn syrup
  • 4 ounces high-quality semisweet chocolate, finely chopped
  • 1 teaspoon vanilla
  • In a medium saucepan, combine heavy cream and corn syrup. Bring to a simmer over medium heat; remove from heat. Add chocolate; whisk until melted. Stir in vanilla.

Instructions

  • Line a baking sheet with parchment paper. In a small bowl, combine flour, sugar and salt. In a medium saucepan, combine water and butter. Bring to a boil. Add flour mixture all at once, stirring vigorously with a wooden spoon. Cook and stir until mixture forms a ball; remove from heat. Cool 10 minutes. Preheat oven to 400 degrees. Add eggs, 1 at a time, beating well with a wooden spoon after each addition. Using 2 spoons, drop dough into 12 mounds onto prepared baking sheet. (Use wet fingers to smooth out the tops.) Bake until golden, 30 to 35 minutes. Transfer to a wire rack; cool completely. To serve, cut the top 1/3 from the baked puffs; remove any soft dough inside. Fill with Creamy Vanilla Filling. Replace tops; drizzle with Chocolate Sauce. Makes 12 profiteroles.

Ingredients

  • 1 (4-ounce) can mild fire roasted diced green chiles, undrained
  • 1 (8-ounce) package regular or reduced-fat cream cheese, softened
  • 1 8-ounce carton regular or reduced-fat sour cream
  • 1 cup regular or light mayonnaise
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tablespoon dried minced onion
  • 2 teaspoons finely grated lime zest
  • 1 teaspoon cumin
  • 3/4 teaspoon chili powder, more or less as desired
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  • In a blender or food processor, combine all ingredients. Blend or process until smooth, about 1 minute. Transfer to a container. Cover, and refrigerate at least 2 hours. Makes 24 servings.

  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/2 cup sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup butter flavored vegetable shortening
  • 1 egg
  • 1 cup hot water
  • 3/4 cup molasses
  • Whipped cream (optional)

Instructions

  • Preheat oven to 350 degrees. Grease a 9x9-inch square baking pan with shortening; dust with flour. In a medium bowl, combine flour, baking soda, ginger, cinnamon, salt, and cloves. In a large bowl, combine sugar, brown sugar, and shortening. Beat with an electric mixer until well blended. Add egg; beat until combined. Add hot water and molasses; beat until blended. Add flour mixture; beat until combined. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 35 to 40 minutes. Cool completely on a wire rack. Top each piece of gingerbread with a dollop of whipped cream, if desired. Makes 16 servings.

  • White sparkling sugar

Instructions

  • Line a baking sheet with waxed paper. In a large bowl, combine confectioners’ sugar, peanut butter, and butter. Using a wooden spoon, stir until well combined. Divide mixture into 24 portions; place on prepared baking sheet. Shape into balls. Refrigerate until firm, about 30 minutes.
  • Meanwhile, place candy melts in a medium microwave-safe bowl; melt in the microwave according to package directions. Dip balls into melted candy, using a spoon to help coat them. Use a fork to remove them; place on prepared baking sheet. Sprinkle with white sparkling sugar. Refrigerate until set, about 15 minutes. (Bonbons may be prepared up to 1 week in advance. Store tightly covered and refrigerated. Allow bonbons to come to room temperature before serving.) Makes 24 bonbons.

  • 3 eggs
  • 3/4 cup sugar
  • 3/4 cup light corn syrup
  • 2 tablespoons (1/4 stick) butter, melted
  • 1 teaspoon vanilla
  • 1 1/2 cups coarsely chopped pecans or pecan halves
  • 2-ounces high-quality semisweet chocolate, chopped
  • Whipped cream (optional)
  • PASTRY FOR 9-INCH SINGLE-CRUST PIE
  • 1 1/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cold vegetable shortening
  • 4 to 5 tablespoons ice water
  • In a medium bowl, combine flour and salt. Using a pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs. Sprinkle 1 tablespoon water over the flour mixture; toss with a fork. Push moistened flour mixture to the side of the bowl. Repeat, using 1 tablespoon of the remaining water at a time, until all of the flour mixture is moist. Gather pastry into a ball; shape into a disk. Cover with plastic wrap; refrigerate 30 minutes.
  • Flour rolling surface and rolling pin lightly. Roll pastry into a circle about 12-inches in diameter. Trim circle about 1 1/2-inches larger than an upside down 9-inch pie plate. Carefully remove trimmed dough. Fold dough into quarters. Unfold and press into pie plate. Fold edge under; flute or crimp as desired.

  • Prepare pastry for 9-inch pie crust as directed. Preheat oven to 350 degrees; line pie plate with pastry crust. In a medium bowl, whisk together eggs, sugar, corn syrup, butter, and vanilla. Stir in pecans and chocolate; transfer to piecrust. Bake until filling is puffed, 35 to 40 minutes. Cool pie completely on a wire rack. Top each slice of pie with a dollop of whipped cream, if desired. Makes 8 servings

  • 1 cup milk
  • 3/4 cup half-and-half or fat-free half-and-half

  • 3 tablespoons pure maple syrup
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla
  • Brewed coffee

Instructions

  • In a medium saucepan, whisk together milk, half-and-half, brown sugar, pumpkin, maple syrup, and pumpkin pie spice. Cook over medium heat until thoroughly heated, 3 to 5 minutes, stirring frequently. (Do not boil.) Remove from heat; stir in vanilla. Transfer to a measuring cup or heat-resistant pitcher.
