Easy Rainbow Sprinkle Cookies

Ingredients

  • 1 (15.25-ounce) package white cake mix
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 6 tablespoons (3/4 stick) butter, melted
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1/3 cup multicolored candy sprinkles

Instructions

  • Preheat oven to 350 degrees. In a large bowl, whisk together cake mix, flour, and baking powder. Add butter, vegetable oil, eggs, and vanilla. Stir with a wooden spoon until well mixed; stir in candy sprinkles. Shape dough into 1 1/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 8 to 10 minutes. Cool 2 minutes before removing to a wire rack. Makes about 3 1/2 dozen cookies.

Lemon Bars

Ingredients

  • 2 1/3 cups all-purpose flour, divided
  • 1/2 cup confectioners’ sugar, plus more for sifting over top
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) cold butter, cut into pieces
  • 4 eggs
  • 1 1/2 cups sugar
  • 3/4 cup fresh lemon juice
  • 1 teaspoon finely grated lemon zest

Instructions

  • Preheat oven to 350 degrees. In a large bowl, combine 2 cups flour, 1/2 cup confectioners’ sugar, and salt. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Pat mixture evenly into the bottom of a 9x13-inch baking pan. Bake until edges are golden, 20 to 22 minutes.
  • Meanwhile, in a large bowl, whisk together eggs, sugar, lemon juice, and lemon zest. Add the remaining 1/3 cup flour; whisk until combined. Pour over hot crust. Reduce oven temperature to 300 degrees; bake until set, 30 to 35 minutes. Cool completely on a wire rack. Refrigerate until thoroughly chilled, about 2 hours. Sift confectioners’ sugar over top. Cut into bars. Makes 32 bars.

Meanwhile, mash the remaining strawberries. In a small bowl, combine cornstarch and lemon juice. Add mashed strawberries and cornstarch mixture to rhubarb mixture. Bring to a boil. Reduce heat; simmer 2 minutes, stirring frequently. Let stand 10 minutes before serving. Makes 2 cups.

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick) butter, softened
  • 1/4 cup vegetable shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar, plus more for finishing
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • PEANUT BUTTER FROSTING
  • 1/2 cup creamy peanut butter
  • 1/4 cup (1/2 stick) butter, softened
  • 1 1/3 cups confectioners’ sugar
  • 3 tablespoons heavy (or whipping) cream
  • In a large bowl, combine peanut butter and butter; beat with an electric mixer until well blended. Gradually beat in confectioners’ sugar alternately with heavy cream until well combined.

Instructions

  • Preheat oven to 350 degrees. In a medium bowl, combine flour, baking soda, baking powder, and salt. In a large bowl, combine butter, shortening, and peanut butter. Beat with an electric mixer on medium speed for 1 minute. Add 1/2 cup sugar and brown sugar; beat until combined. Add egg and vanilla; beat until combined. Gradually beat in as much flour mixture as possible; stir in the rest. Shape dough into 1 1/4-inch balls; place 2 inches apart on ungreased cookie sheets. Dip a fork in additional sugar; flatten cookies in a crisscross design. Bake until centers are set and edges are crackled, 8 to 11 minutes. Cool 2 minutes before removing to a wire rack. Cool completely. Turn half of the cookies over; add Peanut Butter Frosting to bottoms. Top with the remaining cookies; gently press together. Makes about 1 1/2 dozen cookies.

  • 1 (16-ounce) package pound cake mix, plus ingredients to prepare it

Instructions

  • Preheat oven to 350 degrees. Grease a 9x5-inch loaf pan with shortening; dust with flour. In a small bowl, combine brown sugar, flour, and cinnamon. Add melted butter; stir until combined. Prepare cake mix according to package directions. Transfer 3/4 of the batter to prepared pan. Sprinkle cinnamon mixture over batter in pan; cover with the remaining batter. Using a butter knife, swirl through the batter. Bake until a toothpick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely.   • 2 large ripe avocados
  • 1 tablespoon fresh lime juice
  • 1 medium tomato, seeded and chopped
  • 2 tablespoons chopped fresh cilantro (optional)
  • 2 tablespoons minced red onion
  • 1 garlic clove, minced
  • 2 teaspoons minced jalapeño chili (optional)
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  • Halve and pit avocados. Scoop avocado flesh into a medium bowl and mash with a fork. Stir in lime juice, tomato, cilantro, onion, garlic, and jalapeño. Season with salt and pepper. Serve with tortilla chips, if desired. Makes 2 cups guacamole.

  • 2 tablespoons butter

  • 3/4 cup regular or reduced-fat peanut butter
  • 1/2 teaspoon vanilla
  • 2 cups crispy rice cereal
  • 1/4 cup peanut butter chips, plus 1 tablespoon

Instructions

  • Preheat oven to 350 degrees. Line a 9x9-inch square baking pan with foil, letting ends extend beyond edges on 2 sides. Coat foil with nonstick cooking spray. Place oats on a baking sheet; bake until lightly browned, 10 to 15 minutes, stirring occasionally. Transfer to a large bowl.
  • In a medium saucepan, combine honey, brown sugar, and butter. Cook over medium heat until sugar has dissolved, about 3 minutes, stirring frequently. Remove from heat; stir in 1/4 cup chocolate chips, peanut butter, and vanilla. Add to oats; stir to combine. Add cereal, the remaining 1/4 cup chocolate chips, and 1/4 cup peanut butter chips; stir to combine. Transfer mixture to prepared pan; press into pan. Sprinkle with the remaining 1 tablespoon chocolate chips and the remaining 1 tablespoon peanut butter chips; press gently into oat mixture. Refrigerate until firm, about 2 hours.   • (White chips or white candy melts may be used in place of chocolate chips, if desired.)
  • 1 cup confectioners’ sugar
  • 1/2 cup creamy peanut butter
  • 3 tablespoons butter, softened
  • 1 1/2 cups semisweet or milk chocolate chips
  • 2 teaspoons vegetable shortening
  • Assorted candy sprinkles, melted chocolate (optional)
  • Green Tinted Coconut* (optional)

Instructions

  • Line a baking sheet with waxed paper. In a large bowl, combine confectioners’ sugar, peanut butter, and butter. Using a wooden spoon, stir until well combined. Shape mixture into 18 balls. Place on prepared baking sheet; form into egg shapes. Refrigerate until firm, 30 to 40 minutes.
  • Meanwhile, place chocolate chips and shortening in a medium microwave-safe bowl. Melt in the microwave according to package directions; stir until smooth. With a fork, dip bottoms of eggs into melted chocolate; use a spoon to help cover the tops and sides of eggs. Lift eggs from melted chocolate letting excess chocolate drip off. Place on prepared baking sheet. Sprinkle with candy sprinkles immediately after dipping, or let stand at room temperature until firm, about 20 minutes, or refrigerate until firm, 5 to 7 minutes, and then drizzle with melted chocolate, if desired. Place tinted coconut on a plate; arrange eggs decoratively in coconut. Makes 1 1/2 dozen peanut butter eggs.
  • *GREEN TINTED COCONUT: In a small bowl combine several drops of green food color with 1 1/ 2 teaspoons water; add to 2 cups coconut. Toss with a fork until evenly tinted.

  • 2/3 cup golden raisins
  • 2 teaspoons caraway seeds

Instructions

  • Line a baking sheet with parchment paper. Preheat oven to 350 degrees. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Using a pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Make a well in the center. Add buttermilk; stir with a fork until moistened. Stir in raisins and caraway seeds.
  • Turn dough out onto a lightly floured surface; knead by folding and pressing until nearly smooth, 10 to 12 strokes. Pat or roll dough into a circle about 1-inch thick; transfer to prepared baking sheet. With a sharp knife, cut a cross 1/4-inch deep on top of loaf. Brush top with the remaining 1 tablespoon buttermilk. Bake until golden brown and a toothpick inserted in center comes out clean, 30 to 35 minutes. Remove to a wire rack. Cool 15 minutes before slicing into wedges. Serve warm or cooled. Makes 1 loaf.

  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 1 cup water
  • 1/2 cup (1 stick) butter
  • 4 eggs
  • Creamy Vanilla Filling
  • Chocolate Sauce
  • CREAMY VANILLA FILLING
  • 1 (4-serving size) package instant vanilla pudding mix
  • 2 cups half-and-half or fat-free half-and-half
  • In a medium bowl, combine pudding mix and half-and-half. Beat with a wire whisk for 2 minutes. Let stand 5 minutes before serving.
  • CHOCOLATE SAUCE
  • 1/2 cup heavy (or whipping) cream
  • 2 tablespoons light corn syrup
  • 4 ounces high-quality semisweet chocolate, finely chopped
  • 1 teaspoon vanilla
  • In a medium saucepan, combine heavy cream and corn syrup. Bring to a simmer over medium heat; remove from heat. Add chocolate; whisk until melted. Stir in vanilla.

Instructions

  • Line a baking sheet with parchment paper. In a small bowl, combine flour, sugar and salt. In a medium saucepan, combine water and butter. Bring to a boil. Add flour mixture all at once, stirring vigorously with a wooden spoon. Cook and stir until mixture forms a ball; remove from heat. Cool 10 minutes. Preheat oven to 400 degrees. Add eggs, 1 at a time, beating well with a wooden spoon after each addition. Using 2 spoons, drop dough into 12 mounds onto prepared baking sheet. (Use wet fingers to smooth out the tops.) Bake until golden, 30 to 35 minutes. Transfer to a wire rack; cool completely. To serve, cut the top 1/3 from the baked puffs; remove any soft dough inside. Fill with Creamy Vanilla Filling. Replace tops; drizzle with Chocolate Sauce. Makes 12 profiteroles.
