Ingredients

  • 1 cup milk
  • 3/4 cup half-and-half or fat-free half-and-half
  • 1/3 cup packed brown sugar
  • 1/4 cup 100 percent pure pumpkin
  • 3 tablespoons pure maple syrup
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla
  • Brewed coffee

Instructions

  • In a medium saucepan, whisk together milk, half-and-half, brown sugar, pumpkin, maple syrup, and pumpkin pie spice. Cook over medium heat until thoroughly heated, 3 to 5 minutes, stirring frequently. (Do not boil.) Remove from heat; stir in vanilla. Transfer to a measuring cup or heat-resistant pitcher. Cool completely. Pour into a bottle. Cover, and store in the refrigerator for up to one week. Shake well before using. Add desired amount of creamer to coffee. Makes about 2 1/4 cups creamer.

Ingredients

  • 1 (15.25 ounce) package white cake mix
  • 1/4 cup flour
  • 1 1/2 teaspoons homemade or store-bought pumpkin pie spice
  • 1/2 cup 100 percent pure pumpkin
  • 10 tablespoons butter, melted
  • 1/4 cup packed brown sugar
  • 2 eggs
  • CINNAMON CREAM CHEESE FROSTING
  • 1 (8-ounce) package regular or reduced-fat cream cheese, softened
  • 1/4 cup (1/2 stick) butter, softened
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 cups confectioners’ sugar
  • In a medium bowl, combine cream cheese, butter, cinnamon, and vanilla. Beat with an electric mixer until creamy. Gradually beat in confectioners’ sugar.

Instructions

  • Preheat oven to 350 degrees. In a large bowl, combine cake mix, flour, and pumpkin pie spice. In a medium bowl, whisk together pumpkin, butter, brown sugar, and eggs. Add to cake mix mixture; stir with a wooden spoon until well combined. Drop by heaping teaspoons 2 inches apart on ungreased cookie sheets. Bake until centers are almost set, 8 to 10 minutes. Cool 2 minutes before removing to a wire rack. Cool completely; frost with Cinnamon Cream Cheese Frosting. Sprinkle with pumpkin pie spice, if desired. Makes 4 dozen cookies.

Ingredients

  • 2 1/4 cups all-purpose flour, plus more for dusting
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup vegetable oil
  • 1 (15-ounce) can 100 percent pure pumpkin
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • Toasted pecans
  • RUM CREAM CHEESE GLAZE
  • 1 (3-ounce) package regular or reduced fat cream cheese, softened
  • 2 tablespoons butter, softened
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla
  • 3/4 cup confectioners’ sugar
  • 2 tablespoons spiced rum
  • 4 to 5 tablespoons milk
  • In a medium bowl, combine cream cheese, butter, pumpkin pie spice, and vanilla. Beat with an electric mixer until creamy. Add confectioners’ sugar; beat until combined. Add rum; beat until blended. Gradually add milk, beating after each addition, until glaze is of drizzling consistency.

Instructions

  • Preheat oven to 350 degrees. Grease a 10-inch fluted tube pan with shortening; dust with flour. In a large bowl, combine flour, baking soda, baking powder, pumpkin spice, cinnamon, and salt. In a medium bowl, whisk together eggs, vegetable oil, pumpkin, sugar, and brown sugar. Add to flour mixture; stir until well combined. Transfer to prepared pan. Bake until toothpick inserted near center comes out clean, 40 to 45 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely; transfer to a cake plate. Drizzle with Rum Cream Cheese Glaze; top with toasted pecans. Makes 16 servings.

Homemade Strawberry Syrup

Ingredients

  • 1 pound strawberries, hulled and sliced
  • 1/2 cup sugar
  • 1 cup water
  • 1/2 teaspoon vanilla
  • Milk (optional)

Instructions

  • In a medium bowl, combine strawberries and sugar. Using a potato masher, mash until well combined. Transfer strawberry mixture to a medium saucepan; add water. Bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally. Remove from heat; stir in vanilla. Let stand 15 minutes. Place a fine-mesh sieve over a measuring cup. Pour strawberry mixture into strainer; press strawberries to extract as much liquid as possible. (Save strawberry solids and use them to make smoothies, stir them into plain yogurt, top off pancakes, waffles, ice cream, pound cake, etc., if desired.) Refrigerate syrup for at least 1 hour before serving. To serve, stir 3 or 4 tablespoons syrup into 1 cup milk, if desired. Syrup may be prepared up to 1 week in advance. Store covered and refrigerated. Makes 1 cup syrup.

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup firmly packed dark brown sugar
  • 1/2 cup sugar
  • 3/4 cup (1 1/2 sticks) butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups semisweet chocolate chips, divided

Instructions

  • Preheat oven to 350 degrees. Line a 9x13-inch baking pan with foil, letting ends extend beyond edges on 2 sides. Lightly spray with nonstick cooking spray. In a large bowl, combine flour, cornstarch, baking powder, and salt.
  • In a medium bowl, whisk together brown sugar, sugar, and butter. Add eggs and vanilla; whisk to combine. Add to flour mixture; stir just until moistened. Stir in 1 1/2 cups chocolate chips. Spread into prepared pan; sprinkle with the remaining 1/4 cup chocolate chips. Bake until edges are light golden brown, 20 to 25 minutes. Cool completely on a wire rack. Remove bar by lifting foil ends; peel off foil. Place bar on a cutting board and cut into squares. Makes 32 bars.

  • 3/4 teaspoon salt
  • 1 3/4 cups sugar
  • 3 eggs
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 tablespoon finely grated lemon zest
  • LEMON GLAZE
  • 1/2 cup confectioners’ sugar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon water
  • In a small bowl, combine confectioners’ sugar, lemon juice, and water; stir until smooth.

Instructions

  • Preheat oven to 350 degrees. Grease the bottoms of two 8x4-inch loaf pans. In a large bowl, combine flour, baking soda, baking powder, and salt. In a medium bowl, whisk together sugar, eggs, butter, oil, and vanilla. Add to flour mixture; stir just until moistened. Add zucchini and lemon zest; stir just until combined. Divide batter between prepared pans. Bake until a toothpick inserted in centers comes out clean, 48 to 53 minutes. Cool in pans 10 minutes before removing to a wire rack. Drizzle loaves with Lemon Glaze. Cool completely. Makes 2 medium loaves

Easy Marble Pound Cake

Ingredients

  • 1 (16-ounce) package pound cake mix
  • 3/4 cup milk
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 2 tablespoons unsweetened cocoa powder

Instructions

  • Preheat oven to 350 degrees. Grease a 9x5-inch loaf pan with shortening; dust with flour. In a large bowl, combine cake mix, milk, butter, and eggs. Blend with an electric mixer on low speed until moistened, about 30 seconds. Increase speed to medium; beat 2 minutes. . Remove 1/3 of the batter to a small bowl; stir cocoa powder into this batter. Spread half of plain batter into prepared pan. Using half of the chocolate batter, drop tablespoonfuls randomly onto plain batter. Spread the remaining plain batter over chocolate batter. Drop the remaining chocolate batter over plain batter in the same manner. Using a butter knife, swirl through the batters to create a marbled effect. Bake until a toothpick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 10 minutes before removing to a wire rack. Cool completely. Makes 12 servings.

  • 6 hard-cooked eggs, peeled
  • 1/4 cup regular or light mayonnaise
  • 2 tablespoons real bacon bits, plus more for garnish
  • 1 teaspoon barbecue sauce
  • 3/4 teaspoon smoked paprika, divided
  • Salt and pepper to taste
  • Fresh chives (optional)

Instructions

  • Slice eggs in half lengthwise. Remove egg yolks from whites. Place yolks in a medium bowl. Mash with a fork. Add mayonnaise, 2 tablespoons bacon bits, barbecue sauce, 1/2 teaspoon paprika, salt, and pepper. Mix well; spoon or pipe mixture into halves of eggs. Sprinkle with bacon bits and the remaining 1/4 teaspoon paprika. Garnish with chives, if desired. Makes 12 deviled eggs
