- 1 pound strawberries, hulled and sliced
- 1/2 cup sugar
- 1 cup water
- 1/2 teaspoon vanilla
- Milk (optional)
Instructions
- In a medium bowl, combine strawberries and sugar. Using a potato masher, mash until well combined. Transfer strawberry mixture to a medium saucepan; add water. Bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally. Remove from heat; stir in vanilla. Let stand 15 minutes. Place a fine-mesh sieve over a measuring cup. Pour strawberry mixture into strainer; press strawberries to extract as much liquid as possible. (Save strawberry solids and use them to make smoothies, stir them into plain yogurt, top off pancakes, waffles, ice cream, pound cake, etc., if desired.) Refrigerate syrup for at least 1 hour before serving. To serve, stir 3 or 4 tablespoons syrup into 1 cup milk, if desired. Syrup may be prepared up to 1 week in advance. Store covered and refrigerated. Makes 1 cup syrup.
